16 thin slices raw salmon
2 shallots, finely chopped
1 leek, finely chopped into 3mm pieces
2 tablespoons Absolut vodka
juice of 1 very ripe bookd orange
1 teaspoon sea salt
freshly milled black pepper
juice of 1 lime
few sprigs mizuno leaves or rocket
Lay out the thin slices of salmon on plates - 4 per plate. Sprinkle each plate evenly with the shallots and leek.
Mix together the vodka and orange juice, divide into 4 equal portsion, and trickle 1 portion on to each plate to cover the salmon
Just before serving, sprinkle lightly with sea salt, freshly ground black pepper and the lime juice. Garnish with mizuno leaves or rocket and serve immediately.
