Alexander Keith's Cheddar & Ale Soup

3 c of chicken stock
1 c blend
1 bottle of Keith’s Beer
1 carrot diced
1 small onion
1 Tbsp flour
½ lb extra old cheddar
½ tsp Worcestershire
paprika, salt and pepper to taste
Saute vegetables in butter.  Add flour and paprika and cook for 5 min.  Add chicken stock stirring well, simmer for one hour, and strain well. Gradually stir in cheese, Worcestershire and Keith's.  Season with salt and pepper to taste.
