Ingredients 1 lb. Jody Maroni Pumante Sausage, defrosted, casings removed 1 tbsp. butter 1 tbsp. olive oil 1 medium onion, chopped 1 cup fresh mushrooms, chopped 4 eggs, slightly beaten 1/2 tsp. granulated garlic 1 tsp. oregano 1 tsp. salt 1 tsp. fresh ground pepper 6 cups raw spinach, coarsely chopped Directions Melt butter and oil in a large skillet. Add the onion and sauté briefly. Mix in mushrooms and sausage and cook until sausage is brown crumbling with a fork while cooking. Add eggs and seasonings and stir over medium heat until eggs are almost cooked. Stir in spinach and cook until spinach is barely wilted. Serve Immediately.
