Jiaji Duck

Qionghai Jiaji Duck was born more than 150 years ago. Ducks are brought up by cage-feeding and cramming. Through this unique method, ducks are excellent and favored by local people for thin skin, tender flesh, brittle bones and tasty, which is entitled One of Four Fantastic Dishes in Hainan Province.

Raising Method: At the first beginning, mix cereal, pollard and bean cake together and operate a blender to mince the feedingstuff. And then squeeze the feed into small dumplings by hands. While feeding, grip one goose and pull it neck straight, cram the small edible dumpling into its mouth. Sometime, secure the goose tightly by tramping down its claws with your feed if necessary. Through this way, Jiaji Goose is quite popular on the market. One characteristic of such kind of goose is that people never let their livestock go away from cage. After 70 days of natural feeding, craming begins three times per day in order to put on weight. 20 days later, the beak and claws of goose whiten, fat penetrates deeply into flesh that tastes delicious. Goose kept in the way is call the genuine Jiaji Goose. Recently, over 100 thousands of geese have been raised per year. Natives in locality adopt goose raising as a way to augment household incomes. They usually keep 200-300 heads of geese, which are sold locally.

Wanquan Cyprinoid

Wanquan River breeds roughly 4 species of cyprinoid fish family: Brook Cyprinoid, Mirror Cyprinoid, Qian Cyprinoid and Phoenix Tail Cyprinoid. The first three species are not different from ordinary cyprinoid fish. But the remaining stands out extraordinarily: orange all over and tail fin as long as body. Brook Cyprinoid, Mirror Cyprinoid and Phoenix Tail Cyprinoid live in the deep crook and torrent waters in the downstream of Wanquan River. Mirror Cyprinoid inhabits in the estuary of Wanquan River to the see where water is a little bit salty. Such special conditions where food is plenty and water is not pure vapid contribute to the most satisfactory taste of Mirror Cyprinoid. Wanquan Cyprinoid is rich in essential nutrients, weighing 1-2 kilograms commonly but sometime 10-15 kilograms to extreme. In fall, Wanquan Cyprinoid accumulates fat to prepare for winter. At this moment, they taste quite better than ever. As for cooking approaches, people always poach, steam or even eat with hot pot. The last one is very common for natives of Jiaji Town.

Hot-spring Goose

Hot-spring Goose is a hybrid kept by farmers living adjacently to the Wanquan River. When the geese are small, farmers always unleash them into the wild to hunt down their own food that chiefly comprises of grass seeds. When weight-putting stage comes, farmers cram the geese with cereal feedingstaff. Hot-spring Goose is nutrient, fatty but not greasy, delicate, aromatic and delicious.
