Sweet Baked Pork with Honey Juice

It's a traditional dish. The process of making this dish is: firstly, prepare a piece of pork in half fat and half lean, then cut it into slices and put them into an earthenware. After that, pickle them with condiments for 45 minutes. String them together with baking rings and put them into the oven to heat for 30 minutes. Pour the syrup on the dish regularly and another 2 minutes heating will be enough. When serving, the pork is sweet outside and salty inside. The lean pork is crisp and the fat one sweet.

The people of Guangzhou like to drink sugar water during the whole year. They think that drinking the sugar water boiled with some herbs, beans, dried fruits, and flour-made snacks has the function of cleaning off the heat, promoting the production of body fluid and is beneficial to the health. There are many kinds of sugar water. The one with beans includes red bean sugar water, green bean sugar water and camber bean sugar water; the pasted one includes sesame paste, walnut paste, peanut paste and phoenix milk paste; the one with herbal medicines includes lily sugar water, lotus seeds sugar water, light tonic water. Besides there are stewed egg, stewed papaya, sweet potato sugar water, lotus seeds paste, soybean milk, semi-congealed bean curd, egg milk, ginger sugar milk and sugar sago. The hot sugar water is called hot beverage and the icy one is called cold beverage. The cold beverage is often served at refrigerator shop (The special shop supplying ice cream, soft drink, and beer. The most famous refrigerator shop is tai Ping Guan Refrigerator Shop on Beijing Rd.) Sugar water is usually the last course of banquets in teahouses. In the traditional wedding ceremony there is still a tradition of drinking lily tea.

Midnight Snacks

Taking midnight snacks is the habit of Guangzhou people. Because it usually starts after 10 clock at night, it is called midnight snacks or snacking midnight. Different people have different ways of taking midnight snacks. Some go to the small restaurants along the street or the saloons of teahouses and taverns by themselves or with friends. Gradually, many midnight food streets are formed in the city and many teahouses and restaurants have midnight market saloons. The midnight market usually has music saloons so as to attract guests.

Roasted Goose

Roasted Goose is a kind of traditional barbecued meat in Guangdong. It originated from Roasted Duck. The medium or small-size Black Brown Goose of Qingyuan is most suitable for this dish. First cut off wings and legs of the goose, take out the guts and then blow it up. Coat the whole goose with five-spice powder and sew it up. Pour boiling water over the goose, and dip it into cold water for a moment. Take out the goose, coat sugar on it, let it dry and then preserve in salt. Hang the goose in roast pan or above open fire, Keep on rolling while heating. Cut it into pieces, arrange on the plate and it can be served. The Crisp-skinned Roasted Goose in Guangzhou. The most famous are those of Yu JI Roasted Goose Restaurant and Shen Jing Roasted Goose of Changzhou Island, Huangpu District.

Drinking Morning Tea

Guangzhou residents like to drink tea, especially morning tea. When they meet in the morning, they usually greet each other by “Have you drunk tea?”, indicating their love for tea. Drinking tea has become a habit of Guangzhou residents. A popular saying goes: “A cup of tea in the morning, no need consulting a doctor”. By drinking tea, Guangzhou residents mean to drink tea in the teahouse, They not only drink tea but also eat pastry as breakfast. They drink not only morning tea but also afternoon tea as well as night tea. They do not only mean to eat but want to spread news, exchange friendship and negotiate business. This we can realize that drinking tea is a mode of social exchange, which is an important and key factor for the long history of prosperous teahouses in Guangzhou through the centuries. Among the old restaurant I Guangzhou, there is quite a lot are the teahouses in the past.

Tea drinkers in Guangzhou can be classified into two categories: One is regular tea drinkers who will go to a fixed teahouse each morning and have “One bowl” (spareribs rice) and “Two pieces” (pastry). These are usually old retired people, Another kind is Sunday tea drinkers who go to drink tea on Holidays. They usually eat various kinds of pastry and taste tea in an easy and comfortable manner instead of taking only “One bowl and Two pieces”.
